Take the butter and the lemon zest, and stuff it inside of the quail. Then, put the quail on a foil sheet, and sprinkle it with the tea, sage, tarragon and thyme. After this, wrap the quail up, put onto a baking tray, and bake it for 20-25 minutes, allowing it to rest in the foil for about five minutes. After removing from foil, extract and throw away lemon zest.
Part 3: The Sauce
You will need: 30g butter. 1 tablespoon grape seed oil. 2 finely chopped slices of prosciutto. A finely chopped brown onion. 1 tablespoon chopped tarragon. 2 tablespoons for flour. 2 cups of chicken consommé. The juices from a half of a lemon and orange. A tablespoon of balsamic vinegar.
Begin by heating the butter and oil over medium heat in a saucepan. Pan fry the prosciutto until it begins to crisp, and then add the onion and the tarragon, cooking until soft. Then, stir in the flour while slowly adding consommé until mixture has thickened. Finally, add lemon and orange juice, cooking over low heat for 15 minutes. Then, add balsamic and then strain.
Combining the MasterChef Recipe:
Arrange the cut pieces of quail on a serving plate, and drizzle the meat with the sauce. Set the onions on the side of the dish, and garnish with baby chive cress.
